And here's one I made earlier ....!

The other day I went to the Post Office today to collect a parcel, as I'd been out when it was originally delivered. I actually thought it was something my son had bought on Ebay, so imagine what a lovely surprise I had when I found it was a gift all the way from the US, from my friend Sharon! Sharon found the recipe for this "Serendipity" cake on line, and sent it to each of her friends from the Inspiration Avenue Etsy team (hi girls!!) along with a "Serendipity" mug, and a beautiful handmade card (made by another team member, Laura). I was so touched by Sharon's generosity and thoughtfulness! I've always been fascinated by the concept of serendipity, and always loved the word itself; in fact "Serendipity" was my original thought for my Etsy shop name, but it was already taken - so Sharon's gift felt particularly personal to me (serendipitous even!??) In case you can't read it from the photo, here's the recipe. I made it today, it's really easy, and my son and I can confirm it was delicious! The cake is made in the mug and can be eaten from the mug or turned out into a bowl. It's quite rich and enough for 2 people to share. Add 4 tbsp flour, 4 tbsp sugar and 4 tbsp cocoa to the mug and mix well. Add 1 egg and mix again. Pour in 3 tbsp of milk and 3 tbsp oil. Add some chocolate chips (optional) and a couple of drops of vanilla essence. Mix well, then microwave for 3 minutes. The cake may rise over the top of the mug. Allow to cool slightly and serve with vanilla (OK - I cheated and used chocolate!) ice-cream or cream.

  3. Oh what a delightful write up and I'm so happy you and your son enjoyed it!! It's amazing how life works isn't it? So many serendipitous moments in life and each of them cherished immensely!!
